FROGSΓÇÖ LEGS
The legs of large frogs do indeed taste like chickenΓÇöwings, to be specificΓÇöalthough some liken them to lobster.
Where found: Fresh, rarely, in the South and Midwest. Frozen in some supermarkets and fish stores.
To buy: Fresh, they must be fresh smelling (the faint scent of mud is acceptable). Frozen, without freezer burn. Figure at least six pairs per person.
To store: If fresh, refrigerate and eat within a day.
To clean: No preparation is needed.
Best cooking techniques: Fried or sautéed with butter and garlic.
When is it done? When firm and opaque throughout.
