  2. The legs of large frogs do indeed taste like chickenΓÇöwings, to be specificΓÇöalthough some liken them to lobster.
  3.     Where found: Fresh, rarely, in the South and Midwest. Frozen in some supermarkets and fish stores.
  4.     To buy: Fresh, they must be fresh smelling (the faint scent of mud is acceptable). Frozen, without freezer burn. Figure at least six pairs per person.
  5.     To store: If fresh, refrigerate and eat within a day.
  6.     To clean: No preparation is needed.
  7.     Best cooking techniques: Fried or saut├⌐ed with butter and garlic.
  8.     When is it done? When firm and opaque throughout.
